วันที่ 6 สิงหาคม 2569 คณะเทคโนโลยีการประมงและทรัพยากรทางน้ำ มหาวิทยาลัยแม่โจ้ จัดกิจกรรม ฝึกทักษะวิชาชีพ ตอน “ซูชิ (Sushi)” เพื่อเสริมสร้างทักษะการเรียนรู้เชิงปฏิบัติและบูรณาการองค์ความรู้จากรายวิชา การแปรรูปผลิตภัณฑ์สัตว์น้ำ สู่การผลิตอาหารที่สามารถนำไปประยุกต์ใช้ได้จริง โดยเปิดโอกาสให้นักศึกษาเรียนรู้และฝึกปฏิบัติอย่างใกล้ชิดกับ วิทยากรมืออาชีพที่มีประสบการณ์ด้านการทำซูชิ โดยคณะฯได้รับเกียรติจากเชฟไข่ ณัฏฐชัย ธาดาธนทัต จาก Cook with Love Academy เป็นวิทยากรสอนในบทปฏิบัติการ การทำซูชิ ในรายวิชาแปรรูปผลิตภัณฑ์ทางการประมงกิจกรรมมุ่งเน้นการเรียนรู้แบบ Learning by Doing ตั้งแต่การเตรียมวัตถุดิบสัตว์น้ำ การเลือกและจัดการวัตถุดิบอย่างเหมาะสม การเตรียมข้าวและส่วนประกอบ เทคนิคการหั่นและขึ้นรูป การทำซูชิในรูปแบบต่าง ๆ ตลอดจนการจัดตกแต่งผลิตภัณฑ์ให้มีความสวยงามและน่ารับประทาน โดยคำนึงถึง คุณภาพ ความสะอาด สุขลักษณะ และความปลอดภัยของอาหาร ควบคู่กับการสร้างมูลค่าเพิ่มให้แก่ผลิตภัณฑ์สัตว์น้ำการฝึกปฏิบัติร่วมกับวิทยากรมืออาชีพช่วยให้นักศึกษาได้เชื่อมโยง องค์ความรู้ทางวิชาการกับเทคนิคและประสบการณ์จากการทำงานจริง เข้าใจมาตรฐานและความต้องการของผู้บริโภค ตลอดจนเรียนรู้แนวคิดด้านการพัฒนาผลิตภัณฑ์ การนำเสนออาหาร และการสร้างมูลค่าทางการตลาด ซึ่งเป็นทักษะสำคัญสำหรับการประกอบอาชีพในอุตสาหกรรมอาหารและธุรกิจที่เกี่ยวข้องกับผลิตภัณฑ์สัตว์น้ำบรรยากาศภายในกิจกรรมเต็มไปด้วยความสนุกสนานและการมีส่วนร่วม นักศึกษาได้ลงมือทำซูชิด้วยตนเอง แลกเปลี่ยนเรียนรู้ระหว่างเพื่อน อาจารย์ และวิทยากร พร้อมนำเสนอผลงานที่ได้จากการฝึกปฏิบัติ สะท้อนให้เห็นถึงการจัดการเรียนรู้ที่เปลี่ยน “ห้องเรียน” ให้เป็น “พื้นที่ฝึกประสบการณ์วิชาชีพ” อย่างเป็นรูปธรรมกิจกรรมครั้งนี้เป็นอีกหนึ่งแนวทางของคณะเทคโนโลยีการประมงและทรัพยากรทางน้ำในการพัฒนาการเรียนการสอนที่เชื่อมโยง วิชาการ – ทักษะวิชาชีพ – ผู้เชี่ยวชาญ – การประกอบอาชีพ เพื่อให้นักศึกษาไม่เพียงมีความรู้ด้านทรัพยากรสัตว์น้ำ แต่ยังสามารถนำวัตถุดิบสัตว์น้ำมาต่อยอด สร้างมูลค่าเพิ่ม และพัฒนาเป็นผลิตภัณฑ์ที่ตอบโจทย์ตลาดและผู้บริโภคได้ในอนาคต“เรียนรู้จากมืออาชีพ ลงมือทำจริง ต่อยอดสัตว์น้ำสู่ผลิตภัณฑ์มูลค่าสูง” อีกหนึ่งประสบการณ์การเรียนรู้ที่เตรียมความพร้อมให้นักศึกษาก้าวจากห้องเรียนสู่โลกของการทำงานและการเป็นผู้ประกอบการอย่างมั่นใจOn 6 August 2026, the Faculty of Fisheries Technology and Aquatic Resources, Maejo University, organized a professional skills development activity entitled “Sushi Workshop”. The activity was designed to integrate academic knowledge from the Aquatic Product Processing course with practical, hands-on experience, providing students with an opportunity to learn directly from a professional sushi chef and industry practitioner. The Faculty was privileged to have Chef Khai Nattachai Thadathanathat from Cook with Love Academy as the guest lecturer and instructor for the hands-on sushi-making workshop conducted as part of the Fishery Products Processing course.The workshop emphasized a Learning by Doing approach. Students gained practical experience throughout the sushi-making process, including the selection and preparation of aquatic raw materials, proper handling of ingredients, rice and ingredient preparation, cutting and shaping techniques, preparation of various types of sushi, and attractive product presentation. Particular attention was given to product quality, hygiene, food safety, and value addition to aquatic products.Learning directly from a professional enabled students to connect academic knowledge with real-world techniques and industry experience. The activity also introduced students to professional standards, consumer expectations, product development, food presentation, and marketing concepts—all of which are essential competencies for future careers in the food industry and aquatic product businesses.The workshop created a highly engaging and enjoyable learning environment. Students actively prepared their own sushi, exchanged knowledge and techniques with classmates, instructors, and the guest professional, and proudly presented their finished products. The activity demonstrated how a conventional classroom can be transformed into a practical professional learning environment, where knowledge is reinforced through authentic experience.This initiative reflects the Faculty of Fisheries Technology and Aquatic Resources’ commitment to developing an educational model that connects academic knowledge, professional skills, industry expertise, and entrepreneurship. Through such experiential learning activities, students are equipped not only with knowledge of aquatic resources but also with the ability to transform aquatic raw materials into innovative, value-added products that respond to market and consumer demands.“Learn from professionals. Practice through real experience. Transform aquatic resources into high-value products.”The Sushi Workshop represents another important learning experience that prepares students to confidently move from the classroom to professional careers and entrepreneurship in the fisheries and aquatic food industries.

คณะเทคโนโลยีการประมงและทรัพยากรทางน้ำ มหาวิทยาลัยแม่โจ้ จัดบรรยายพิเศษ "ธุรกิจกุ้งก้ามกรามครบวงจร" ถ่ายทอดองค์ความรู้จากภาคอุตสาหกรรมสู่ห้องเรียน วันที่ 5 สิงหาคม 2569 คณะเทคโนโลยีการประมงและทรัพยากรทางน้ำ มหาวิทยาลัยแม่โจ้ จัดโครงการบรรยายพิเศษด้านการเพาะเลี้ยงสัตว์น้ำ ภายใต้หัวข้อ "ธุรกิจกุ้งก้ามกรามครบวงจร" ณ ห้อง FT 1301 เพื่อเสริมสร้างองค์ความรู้และประสบการณ์จริงจากผู้เชี่ยวชาญในภาคอุตสาหกรรมและผู้ประกอบการ ให้แก่นักศึกษาสาขาประมงและผู้สนใจการบรรยายครั้งนี้ได้รับเกียรติจากวิทยากรผู้ทรงคุณวุฒิ 3 ท่าน ได้แก่คุณสยมพร เจริญรักษ์ ผู้จัดการทั่วไป บริษัท โกรเบสท์ คอร์ปอเรชั่น จำกัด บรรยายในหัวข้อ "ธุรกิจกุ้งก้ามกรามครบวงจร" เวลา 14.00–14.45 น. ถ่ายทอดแนวคิดการบริหารธุรกิจ การพัฒนาห่วงโซ่อุปทาน และการสร้างมูลค่าเพิ่มให้กับอุตสาหกรรมกุ้งก้ามกรามคุณพัฒนจิตต์ สินเสมจันทร์ ผู้ประกอบการเลี้ยงกุ้งก้ามกรามเชิงพาณิชย์ บรรยายในหัวข้อ "การเลี้ยงกุ้งก้ามกรามเชิงพาณิชย์" เวลา 14.45–15.30 น. ถ่ายทอดประสบการณ์ตรงในการจัดการฟาร์ม เทคนิคการผลิต และแนวทางการสร้างความสำเร็จในธุรกิจการเพาะเลี้ยงนายกิตติพัฒน์ ศรีสมวงศ์ รองประธานชมรมผู้เลี้ยงกุ้งจังหวัดฉะเชิงเทรา บรรยายในหัวข้อ "จุลินทรีย์กับการเลี้ยงกุ้ง" เวลา 15.30–16.15 น. นำเสนอการประยุกต์ใช้จุลินทรีย์เพื่อเพิ่มประสิทธิภาพการเลี้ยงกุ้ง ลดต้นทุน และส่งเสริมการผลิตที่เป็นมิตรต่อสิ่งแวดล้อมการจัดกิจกรรมครั้งนี้สะท้อนถึงความร่วมมือระหว่าง คณะเทคโนโลยีการประมงและทรัพยากรทางน้ำ มหาวิทยาลัยแม่โจ้ กับภาคเอกชนและเครือข่ายผู้ประกอบการด้านการเพาะเลี้ยงสัตว์น้ำ เพื่อพัฒนาศักยภาพนักศึกษาให้มีความพร้อมต่อการประกอบวิชาชีพ ตลอดจนสร้างเครือข่ายความร่วมมือทางวิชาการ การวิจัย และการถ่ายทอดเทคโนโลยี อันจะนำไปสู่การยกระดับอุตสาหกรรมกุ้งก้ามกรามของประเทศไทยให้เติบโตอย่างยั่งยืนกิจกรรมดังกล่าวได้รับความสนใจจากคณาจารย์ นักศึกษา และผู้สนใจด้านการเพาะเลี้ยงสัตว์น้ำเป็นจำนวนมาก นับเป็นเวทีสำคัญในการแลกเปลี่ยนองค์ความรู้ระหว่างสถาบันการศึกษาและภาคอุตสาหกรรม เพื่อร่วมกันขับเคลื่อนการพัฒนาการประมงและทรัพยากรทางน้ำของประเทศในอนาคตMaejo University Strengthens Industry–Academia Collaboration through Special Lecture on the Integrated Giant Freshwater Prawn IndustryChiang Mai, Thailand – 5 August 2026 – The Faculty of Fisheries Technology and Aquatic Resources, Maejo University, organized a special academic seminar entitled “The Integrated Giant Freshwater Prawn Business” at Room FT 1301, bringing together leading industry professionals and commercial aquaculture practitioners to share practical knowledge and real-world experiences with students and members of the aquaculture community.The event was designed to bridge the gap between academic learning and industry practice by providing students with direct exposure to current business strategies, technological innovations, and sustainable production systems within Thailand's giant freshwater prawn industry.The seminar featured three distinguished speakers representing key sectors of the aquaculture industry.Mr. Sayomporn Charoenrak, General Manager of Grobest Corporation Co., Ltd., delivered the opening lecture, “The Integrated Giant Freshwater Prawn Business” (2:00–2:45 p.m.). His presentation explored integrated business management, supply chain development, value-added production, and emerging opportunities for strengthening the competitiveness of Thailand's giant freshwater prawn industry in domestic and international markets.The second lecture, “Commercial Giant Freshwater Prawn Farming” (2:45–3:30 p.m.), was presented by Mr. Phattanachit Sinsemchan, a successful commercial giant freshwater prawn farmer. He shared practical insights into farm management, production technologies, operational challenges, and business strategies developed through years of commercial farming experience.The final session, “Microorganisms in Shrimp Farming” (3:30–4:15 p.m.), was delivered by Mr. Kittipat Srisomwong, Vice President of the Chachoengsao Shrimp Farmers Association. His presentation highlighted the application of beneficial microorganisms to improve shrimp health, enhance production efficiency, reduce farming costs, and promote environmentally sustainable aquaculture practices.The seminar reflects the Faculty's commitment to strengthening partnerships between higher education institutions and the aquaculture industry. By integrating academic knowledge with industrial expertise, the Faculty aims to prepare students with the professional competencies, technical skills, and entrepreneurial perspectives required to meet the evolving demands of the global aquaculture sector.Beyond student development, the event also serves as a platform for expanding collaboration in research, innovation, technology transfer, and workforce development between Maejo University, private enterprises, and professional aquaculture networks. Such partnerships are expected to contribute significantly to the sustainable advancement and international competitiveness of Thailand's giant freshwater prawn industry.The seminar attracted strong participation from faculty members, undergraduate students, researchers, aquaculture professionals, and industry stakeholders.
