The activity was designed to integrate academic knowledge from the Aquatic Product Processing course with practical, hands-on experience, providing students with an opportunity to learn directly from a professional sushi chef and industry practitioner. The Faculty was privileged to have Chef Khai Nattachai Thadathanathat from Cook with Love Academy as the guest lecturer and instructor for the hands-on sushi-making workshop conducted as part of the Fishery Products Processing course. The workshop emphasized a Learning by Doing approach. Students gained practical experience throughout the sushi-making process, including the selection and preparation of aquatic raw materials, proper handling of ingredients, rice and ingredient preparation, cutting and shaping techniques, preparation of various types of sushi, and attractive product presentation. Particular attention was given to product quality, hygiene, food safety, and value addition to aquatic products.Learning directly from a professional enabled students to connect academic knowledge with real-world techniques and industry experience. The activity also introduced students to professional standards, consumer expectations, product development, food presentation, and marketing concepts—all of which are essential competencies for future careers in the food industry and aquatic product businesses. The workshop created a highly engaging and enjoyable learning environment. Students actively prepared their own sushi, exchanged knowledge and techniques with classmates, instructors, and the guest professional, and proudly presented their finished products. The activity demonstrated how a conventional classroom can be transformed into a practical professional learning environment, where knowledge is reinforced through authentic experience. This initiative reflects the Faculty of Fisheries Technology and Aquatic Resources’ commitment to developing an educational model that connects academic knowledge, professional skills, industry expertise, and entrepreneurship. Through such experiential learning activities, students are equipped not only with knowledge of aquatic resources but also with the ability to transform aquatic raw materials into innovative, value-added products that respond to market and consumer demands.“Learn from professionals. Practice through real experience. Transform aquatic resources into high-value products.”The Sushi Workshop represents another important learning experience that prepares students to confidently move from the classroom to professional careers and entrepreneurship in the fisheries and aquatic food industries.

More than 40 teachers and students participated in the activity. The opening ceremony was presided over by Associate Professor Dr.Apinun Suvarnaraksha, who officially opened the program and presented certificates to the participants. The training was conducted by the Faculty’s Academic Services Committee, led by Dr. Nongponga Saengcharoen and Ms. Nattakarn Mukdajaturaphak, with support from Mr. Thanawat King-inMs. Nuntaka PrathumthaMs. Pannaphat Yotha, and Ms. Wararin Jankhong, undergraduate students from the Program in Fisheries and Aquatic Production Innovation. The team actively shared knowledge and provided close supervision during the hands-on training sessions. The program consisted of both theoretical and practical components. Participants learned the principles of aquatic product processing and value addition, followed by practical training in the production of fish and shrimp spring rolls and fish and shrimp dumplings. Students gained experience in raw material preparation and trimming, ingredient formulation, product shaping, and hygienic processing practices. These skills are expected to help participants apply their knowledge in developing value-added aquatic products in the future.Representatives from Phrao Wittayakhom SchoolMr. Piriya Wattanasirisereekul and Ms. Suphada Tonklor, also supported and facilitated the activity. The training was linked to the school’s Aryakaset Learning Program for Classroom A (General Arts Program), which emphasizes experiential learning, career skill development, and the utilization of local resources to create added value. The Faculty of Fisheries Technology and Aquatic Resources and Phrao Wittayakhom School have maintained continuous collaboration in fisheries education. Their partnership began with initiatives promoting fish farming and later expanded to the development of learning centers for Nile tilapia and catfish culture within the school. These activities have enabled students to utilize harvested fish as raw materials for further product processing.Recognizing the school’s potential and readiness, the Faculty has extended its support this year by establishing a fish processing learning center at the school. To strengthen hands-on learning and vocational training opportunities, the Faculty also provided a learning-center signboard and fish-processing equipment for fish filleting and trimming activities. These resources will support educational activities, skill development, and the production of value-added products that can generate supplementary income for students. The activity was implemented under the project “Development of Integrated Fisheries and Aquatic Production Innovation Learning Centers and Promotion of Career Skills, Income Generation, and Entrepreneurial Development in Comprehensive Aquaculture through the BCG Economy Model.” The project aims to strengthen grassroots economic development among community fisheries volunteer groups and partner schools while promoting sustainable career pathways and entrepreneurship among youth. This initiative reflects the strong collaboration between Maejo University and educational institutions in transferring academic knowledge to practical applications, enhancing vocational skills, and creating sustainable opportunities for future careers and community development.
