On 17 July 2026, the Faculty of Fisheries Technology and Aquatic Resources, Maejo University, organized a training program entitled “Aquatic Product Processing: Tilapia Scale Chili Paste and Catfish Crackers” at Hot Pittayakhom School, Hang Dong Subdistrict, Hot District, Chiang Mai Province. The activity was attended by 35 students and teachers.
The training was conducted under the project “Development of Fisheries Learning Bases and Integrated Aquatic Production Innovation to Promote Career Skills, Income Generation, and Entrepreneurship in Aquaculture through the BCG Economy Model.” The project aims to strengthen grassroots economic development among community fisheries volunteer groups and target schools by promoting sustainable aquaculture practices and entrepreneurship.
The activity was led by the Faculty’s academic service team, including Dr. Kajornkiat Srinuansom, Dr. Nongphanga Saengcharoen, and Ms. Nattakan Mukdachaturaphak, together with Mr. Drukpola, a master’s student, and undergraduate students Ms. Achiraya Sueacharoen, Ms. Paphawee Baibunnarawut, and Ms. Rungtiwa Mookkhan, from the Program in Fisheries and Aquatic Production Innovation. The team shared knowledge, supervised practical sessions, and exchanged experiences with participating students and teachers.
The training covered key principles of aquatic product processing, efficient utilization of raw materials, good manufacturing hygiene practices, and value-added approaches for aquatic products. Participants then engaged in hands-on activities to produce Tilapia Scale Chili Paste and Catfish Crackers, learning every step of the process, from raw material preparation and ingredient mixing to product processing, packaging, and proper storage.
Through practical learning experiences, students gained a deeper understanding of aquatic product processing and value addition, particularly the innovative use of tilapia scales—normally considered processing waste—as a valuable ingredient.
