ระหว่างวันที่ 21–22 กรกฎาคม 2569 คณะกรรมการบริการวิชาการ คณะเทคโนโลยีการประมงและทรัพยากรทางน้ำ มหาวิทยาลัยแม่โจ้ จัดฝึกอบรมหลักสูตร “การแปรรูปผลิตภัณฑ์จากสัตว์น้ำ: ปอเปี๊ยะปลากุ้งและขนมจีบปลากุ้ง” ณ คณะเทคโนโลยีการประมงและทรัพยากรทางน้ำ มหาวิทยาลัยแม่โจ้ โดยมีครูและนักเรียนเข้าร่วมกิจกรรมกว่า 40 คน
ในการนี้ รองศาสตราจารย์ ดร.อภินันท์ สุวรรณรักษ์ เป็นประธานกล่าวเปิดกิจกรรม และมอบเกียรติบัตรแก่ผู้เข้าร่วมอบรม
กิจกรรมดำเนินการโดยคณะกรรมการบริการวิชาการ นำโดยอาจารย์ ดร.นงพงา แสงเจริญ และนางสาวณัฐกานต์ มุกดาจตุรพักตร์ พร้อมด้วยนายธนวรรฒน์ กิ่งอินทร์ นางสาวนันทกา ประทุมทา นางสาวพรรณภัทร โยธา และนางสาววรารินทร์ จันทร์คง นักศึกษาระดับปริญญาตรี สาขาการประมงและนวัตกรรมการผลิตสัตว์น้ำ ร่วมถ่ายทอดความรู้และดูแลการฝึกปฏิบัติอย่างใกล้ชิด
การฝึกอบรมประกอบด้วยภาคบรรยายเกี่ยวกับหลักการแปรรูปและการเพิ่มมูลค่าสัตว์น้ำ ควบคู่กับภาคปฏิบัติในการผลิตปอเปี๊ยะปลากุ้งและขนมจีบปลากุ้ง นักเรียนได้เรียนรู้ตั้งแต่การเตรียมและตัดแต่งวัตถุดิบ การเตรียมส่วนผสม การขึ้นรูปผลิตภัณฑ์ และการควบคุมสุขลักษณะในกระบวนการผลิต เพื่อให้สามารถนำความรู้ไปประยุกต์ใช้และพัฒนาผลิตภัณฑ์จากสัตว์น้ำได้อย่างเหมาะสม
ทางโรงเรียนพร้าววิทยาคมมีนายปริยะ วัฒนศิริเสรีกุล และนางสาวสุภดา ต้นกล ร่วมดูแลและสนับสนุนการดำเนินกิจกรรม ซึ่งเชื่อมโยงกับกิจกรรมการเรียนรู้ในหลักสูตรอารยเกษตรสำหรับห้องเรียน A (แผนการเรียนศิลป์ทั่วไป) มุ่งส่งเสริมให้นักเรียนเรียนรู้ผ่านการลงมือปฏิบัติจริง พัฒนาทักษะอาชีพ และเห็นแนวทางการนำทรัพยากรที่มีอยู่มาสร้างมูลค่าเพิ่ม
คณะเทคโนโลยีการประมงและทรัพยากรทางน้ำและโรงเรียนพร้าววิทยาคมได้ดำเนินกิจกรรมความร่วมมือด้านการประมงมาอย่างต่อเนื่อง โดยเริ่มจากการส่งเสริมการเลี้ยงปลา และพัฒนาเป็นฐานเรียนรู้การเลี้ยงปลานิลและปลาดุกภายในโรงเรียน ก่อนนำผลผลิตมาต่อยอดเป็นผลิตภัณฑ์แปรรูป
จากศักยภาพและความพร้อมของโรงเรียน ในปีนี้คณะฯ จึงสนับสนุนการพัฒนาฐานเรียนรู้การแปรรูปสัตว์น้ำ พร้อมมอบป้ายฐานเรียนรู้และอุปกรณ์สำหรับการตัดแต่งเนื้อปลาให้แก่โรงเรียน เพื่อใช้ประกอบกิจกรรมการเรียนรู้ การฝึกทักษะอาชีพ และการผลิตสินค้าเพื่อสร้างรายได้เสริมให้แก่นักเรียน
กิจกรรมดังกล่าวดำเนินงานภายใต้โครงการพัฒนาศักยภาพฐานเรียนรู้ทางการประมงและนวัตกรรมการผลิตสัตว์น้ำแบบบูรณาการ และส่งเสริมทักษะอาชีพ สร้างรายได้ พัฒนาเป็นผู้ประกอบการเพาะเลี้ยงสัตว์น้ำแบบครบวงจรด้วยโมเดลเศรษฐกิจ BCG เพื่อพัฒนาเศรษฐกิจฐานรากของกลุ่มประมงอาสาในพื้นที่ชุมชนและโรงเรียนเป้าหมาย สะท้อนถึงความร่วมมือระหว่างมหาวิทยาลัยและสถานศึกษาในการนำองค์ความรู้ทางวิชาการไปใช้ประโยชน์ ตลอดจนพัฒนาทักษะและโอกาสทางอาชีพให้แก่เยาวชนอย่างยั่งยืน
On 21–22 July 2026, the Academic Services Committee of the Faculty of Fisheries Technology and Aquatic Resources, Maejo University, organized a training program entitled “Aquatic Product Processing: Fish and Shrimp Spring Rolls and Fish and Shrimp Dumplings” at the Faculty of Fisheries Technology and Aquatic Resources, Maejo University. More than 40 teachers and students participated in the activity.
The opening ceremony was presided over by Associate Professor Dr.Apinun Suvarnaraksha, who officially opened the program and presented certificates to the participants.
The training was conducted by the Faculty’s Academic Services Committee, led by Dr. Nongponga Saengcharoen and Ms. Nattakarn Mukdajaturaphak, with support from Mr. Thanawat King-in, Ms. Nuntaka Prathumtha, Ms. Pannaphat Yotha, and Ms. Wararin Jankhong, undergraduate students from the Program in Fisheries and Aquatic Production Innovation. The team actively shared knowledge and provided close supervision during the hands-on training sessions.
The program consisted of both theoretical and practical components. Participants learned the principles of aquatic product processing and value addition, followed by practical training in the production of fish and shrimp spring rolls and fish and shrimp dumplings. Students gained experience in raw material preparation and trimming, ingredient formulation, product shaping, and hygienic processing practices. These skills are expected to help participants apply their knowledge in developing value-added aquatic products in the future.
Representatives from Phrao Wittayakhom School, Mr. Piriya Wattanasirisereekul and Ms. Suphada Tonklor, also supported and facilitated the activity. The training was linked to the school’s Aryakaset Learning Program for Classroom A (General Arts Program), which emphasizes experiential learning, career skill development, and the utilization of local resources to create added value.
The Faculty of Fisheries Technology and Aquatic Resources and Phrao Wittayakhom School have maintained continuous collaboration in fisheries education. Their partnership began with initiatives promoting fish farming and later expanded to the development of learning centers for Nile tilapia and catfish culture within the school. These activities have enabled students to utilize harvested fish as raw materials for further product processing.
Recognizing the school’s potential and readiness, the Faculty has extended its support this year by establishing a fish processing learning center at the school. To strengthen hands-on learning and vocational training opportunities, the Faculty also provided a learning-center signboard and fish-processing equipment for fish filleting and trimming activities. These resources will support educational activities, skill development, and the production of value-added products that can generate supplementary income for students.
The activity was implemented under the project “Development of Integrated Fisheries and Aquatic Production Innovation Learning Centers and Promotion of Career Skills, Income Generation, and Entrepreneurial Development in Comprehensive Aquaculture through the BCG Economy Model.” The project aims to strengthen grassroots economic development among community fisheries volunteer groups and partner schools while promoting sustainable career pathways and entrepreneurship among youth.
This initiative reflects the strong collaboration between Maejo University and educational institutions in transferring academic knowledge to practical applications, enhancing vocational skills, and creating sustainable opportunities for future careers and community development.
